中文摘要 | 餐飲管理科是以培育餐飲業之基層人才為主,而中餐烹飪是所有實習科目 中,最重要也最基礎的。但目前在中餐烹飪的教學,以通過檢定為主,似 乎較為缺乏創意思考的訓練。本文旨在探討創意教學如何運用在中餐烹飪 課程中,並以行動研究的方式,在筆者任教之學校進行教學實驗,在過程 中,可以明顯感受到學生的成長,即使是原本學習態度比較被動的人,也 能從中找到學習的動力。此外,也期望能更進一步改善中餐烹飪課程的教 學模式,為教學活動帶來新的方向。 |
英文摘要 | The aim of food and beverage management department is to cultivate the basic workers of the food and beverage industry as the major. And the Chinese food cooking is the most important and the most basic in all practice subjects. But the instruction of Chinese food cooking is critical of taking passing the examination as the major object and lacking creativity thinking training. The aim of this study is inquiring into how the creativity teaching is used in Chinese food cooking instruction with action research. In the process, we can find the evidence of student's growth obviously from interview. Even the students with passive learning attitude, also can find out the motive of the learning from instruction. In addition, we also expect the further improvement of the teaching mode for Chinese food cooking curriculum and bring the new direction for the teaching activity. |
