英文摘要 | The objective of this study were investigated the approximate compositions and antioxidant activities of waxy corn (c.v. Tainung No.5) as affected by different locations in Taiwan. Results were summarized as follows: The significance tests for differences in approximate composition of physiological maturity on c.v. Tainung No.5 in the spring crop indicated that ash crude protein, crude fat, crude fiber and N.F.E all showed to significant differences. Moisture showed great significant difference. The test of antioxidant properties indicated that total phenolics and flavonoids showed no significant differences. However, total antioxidant activity showed significant differences. DPPH free radical scavenging effect showed the greatest significant difference. Ferrous iron chelating capacity and reducing power both showed no significant differences. The significance tests for differences in dry kernels of c.v. Tainung No.5 in the spring crop indicated that crude fat showed significant difference, and moisture, ash. N.F.E showed the greatest significant differences. The test of antioxidant capacity indicated that flavonoids and ferrous iron chelating capacity showed significant differences. The significance tests for differences in approximate composition of physiological maturity on c.v. Tainung No.5 in the fall crop indicated that moisture and ash showed significant differences. Crude protein and N.F.E showed the greatest significant differences. The test of antioxidant capacity yielded various results. It indicated that ferrous iron chelating capacity, total antioxidant activity and reducing power showed significant differences, but flavonoids and DPPH free radical scavenging effect showed the greatest significant differences. The significance tests for differences in dry kernel on c.v. Tainung No.5 in the fall crop indicated that crude protein and crude fiber showed significant differences. Moisture, ash, crude fat and N.F.E. showed the greatest significant differences. The test of antioxidant capacity indicated that total phenolics showed significant differences.
