中文摘要 | 本文探討寶特瓶於無菌環境下,充填過滿對於產品品質影響。以五種不同變項:(1) 添加砂糖與未添加砂糖;(2) 添加羧甲基纖維素 (Carboxymethylcellulose, CMC) 與未添加羧甲基纖維素;(3) 洗瓶口與未洗瓶口;(4) 調整培養液pH至7.0±0.2與4.0±0.1 ; (5) 儲存環境相對濕度 98%~100% 與相對濕度75%±5%,對於滿液位培養液 (充填過程溢出,培養液高度與瓶蓋內襯接觸) 與正常液位培養液 (充填過程未溢出,培養液與瓶口接觸距離2cm以上) 進行測試。滿液位與正常液位培養液個別針對以上五種均各取20瓶,儲放30日後,觀察有無瓶口發霉 (rottenness) 產生,並以位相差顯微鏡檢查有無徽菌菌絲。經由統計分析結果發現,有無添加 CMC、是否清洗瓶口以及培養液儲存相對濕度,對於滿液位培養液瓶口發霉有顯著影響。 根據實驗結果,若要防止瓶口發霉應朝:(1). 充填人員應避免充填液位過高,導致培養液黏附於瓶口;(2). 增設充填後洗瓶口裝置; (3). CMC的添加量應考慮洗瓶後的效果;(4). 避免產品儲存於相對溼度過高環境,等方向努力。 |
英文摘要 | In this article, we investigate the effect of over filling of PET bottles under aseptic environment. Five factors are considered, i. e., Sucrose, Carboxymethylcellulose (CMC), washing bottle vent, pH and RH. Two filling state are considered: over filling and normal liquid level. We take 20 bottles for each filling state and each factor. Then, they are stored 30 days. At the end of 30 days, we inspect whether there are mold mycelia or not. These experimental datas are examined by statistic analysis. The independent test results show that adding CMC or not, washing bottle vent or not, washing bottle vent or not, and R. H. influence the state of rottenness significantly. |
