中文摘要 | 幼兒期是幼兒飲食習慣和食物喜好的形成期,由於家庭結構的改變,現今家庭多以雙薪家庭為主,許多家長將孩子送至幼兒園托育,使得幼兒園成為供應幼兒營養及培養幼兒良好飲食習慣之重要場所。在台灣,大部分的幼兒園為私立幼兒園,因此瞭解私立幼兒園餐點供應狀況是值得研究的課題。本研究目的為瞭解私立幼兒園餐點與營養素供應狀況。本研究以縣市合併前台中市八個行政區為母群體,依比例分層隨機抽樣十二所私立幼兒園為研究對象,紀錄秤量幼兒園供應給幼兒的餐點與量,收集研究當月之菜單進行餐點分析。私立幼兒園每日平均熱量供應低於50%國人膳食營養素參考攝取量(Dietary Reference Intakes, DRIs);鈉供應量高於50%DRI;醣類、維生素B1、維生素B2、鈣及鐵均低於50%DRI。低脂奶類與蔬菜水果類供應低於50%每日飲食指南之建議。私立幼兒園餐點普遍營養供應不均衡,幼兒園應多供應新鮮的蔬菜水果與低脂奶類,促進幼兒健康成長。 |
英文摘要 | Early childhood is a vital period for establishing life-long eating habits and food preferences. The change from traditional to more-modern family structures means that double-income families have become the norm. Many young children spend their days in a preschool environment outside of the home, and this is primarily where they develop habits related to nutrition and eating. In Taiwan, most preschools are privately owned. The purpose of this study was to examine the nutrition of meals served in private preschools. We randomly selected 12 private preschools from the eight administrative regions of Taichung City, a large urban area of west-central Taiwan. We collected the menus of meals covering 1 month and analyzed the nutrients in those meals. Results showed that the mean number of calories in these meals was 50% lower than that recommended by the Dietary Reference intakes(DRIs). Sodium was >50% higher than the DRI-recommended level. Carbohydrates, vitamin B1, vitamin B2, calcium, and iron did not reach 50% of the levels recommended by the DRI. The quantities of milk, vegetables, and fruit were <50% of those suggested by daily dietary guidelines. The results of this study suggest that most of the meals served in private preschools are nutritionally imbalanced. We suggest that private preschools provide more fruits, vegetables, and dairy products to promote the health and growth of children in their care. |
