中文摘要 | 本研究以食用玉米粉為原料,利用3x3x3複因子設計(加工參數為原料粒徑、進料 速率與螺軸轉速),探討加工參數對滯留時間及產品理化特性(假密度、彩度值、膨發度、水 溶性指標及吸水性指標)之影響。實驗結果顯示:(1)低進料速率或低螺軸轉速,均會降低螺 軸與套筒間之填充度,導致平均滯留時間加長;(2)一般40∼60mesh的原料多使用於雙軸擠 壓機,但以本實驗單軸擠壓機所加工後之產品橫向膨發度、彩度值、水溶性指標及吸水性指 標均較14∼20mesh或20∼40mesh之原料來得高,顯示40∼60mesh之物料於實驗之單軸擠 壓機中可以擠壓且熱加工程度良好。 |
英文摘要 | The corn mill was used as the raw material in a single-screw extruder to study the effects of process variables on the physical and chemical properties. The experiment was a 3x3x3 factorial design, and the process variables were feed particle, feed rate, and screw speed. Mean residence time, bulk density, expansion, saturation index, water solubility index, and water absorption index were investigated. Results indicated that: (1) Decreasing feed rate and screw speed, both lower the filling ratio between the screw and the barrel, and therefore, increased the mean residence time. (2) The feed particles of 40-60 mesh are usually used in a twin-screw extruder. In this research, the extrudate's expansion ratio, saturation index, water solubility index, and water absorption index of 40-60 mesh feed particle were higher than that of 14-20 mesh and 20-40 mesh. So that, the corn particles of 40-60 mesh are also properly used in single-screw extrusion. |
