中文摘要 | 大蒜的食用方式除了蒜頭、青蒜、蒜苔外,還有蒜黃。蒜黃是黃暗環境下由蒜瓣抽長的柔軟新葉,其大蒜素、維他命、無機鹽類等營養分的含量營養豐富。本研究目的為改進蒜黃的生產技術,藉由篩選不同品種、測試不同的栽培溫度、介質種類和噴施生長調節劑對蒜黃生長的影響,期能改進蒜黃的生產技術。評估十六個品種,已篩選出花蒜、VFG174M9和G50-3之產量高和品質最佳,為適合生產蒜黃之品種。將兩個商業品種,即花蒜和大片黑進一步的試驗。溫度試驗結果指出,蒜黃生長在恆溫為25°C的環境下較日/夜溫分別為25/20°C與20/15°C者收獲量較高,但是蒜黃的罹病率和徒長的情形卻較嚴重。有鑑於病害將導致蒜黃品質劣化和可售率,建議蒜黃栽培之溫度應設在25/20°C。以花蒜和大片黑進行十種介質的測試結果指出使用砂或混合碳化稻殼與砂(1:1)的栽培介質表現最好;混合草木灰與砂的介質(M1)則會抑制蒜黃的生長,因其pH值過高和運氣性差而造成蒜黃的生長受抑制。探討生喪調節劑對蒜黃生長的影響,結果顯示實施10 pp滿GA3或1 ppm IAA或10 pp滿kinetin能提高蒜黃的產量。 |
英文摘要 | Garlic can be consumed in various ways such as bulb, green garlic leaves, garlic bolter (flowering stalk ) and blanched garlic sprout. Blanched garlic sprout is the tender shoots from dark grown cloves. It is rich in nutritional values such as allicin, vitamins, minerals, etc. and offers a new way to consume garlic as vegetable. The present study was aimed to improve its production techniques through variety screening, application of different temperature regime, cultural media, and the use of plant growth regulators on the growth of blanched garlic sprout. Out of the 16 varieties tested, ‘Flowering Garlic’, ‘VFG174m9’, and ‘G50-3’ showed promising for blanched garlic production in term of high yield and good eating quality. Two commercial varieties i.e. ‘Flowering Garlic’ and ‘Black Leaf’ were used in followed-up studies. Sprout yield was higher at constant 25°C that at either 25/20°C or 20/15°C day/night temperature, however, disease infection rate was also higher. Therefore, 25/20°C was recommended for enhanced garlic sprout production. Among the ten tested growth media, sand only and mixture of sand and carbonized rice hull (sand+RH) supported high sprout production. However, the mixture of sand and carbonized rice straw (M1) inhibited the growth of blanched garlic sprout. To reduce the high pH level, carbonized rice straw was inhibitory to rinsed and resulted in low porosity of the medium. Spraying of 10 ppm GA3 or 1 PPm IAA or 10 PPm kinetin could increase sprout yields. |
