| 中文摘要 | 本研究以259位臺北縣市餐盒業從業人員為研究對象,主要在了解餐盒從業人員餐飲衛生行為之現況,並探討不同背景的餐盒業員工餐飲衛生行為的差異及影響餐飲衛生行為之因素。利用百分比、平均數、單因子變異數分析及迴歸分析等統計方法加以分析,結果發現: 一、餐盒業從業人員餐飲衛生行為量表全體平均得分佔滿分的88.9%,得分以「供膳及清潔衛生」最佳,「製程衛生」最差。 二、不同背景在餐飲衛生行為部份以在職訓練、衛生檢查表及技術士證具有顯著差異。 三、影響餐飲衛生行為最大的因素則是工作中是否使用衛生自我檢查表,其次是在職訓練。 |
| 英文摘要 | The purpose of this study is to find 259 commissary foodservice staffs’ practice of food sanitation in Taipei. And find the variance in different background variables and influenced factors in practice of food sanitation. To process the statistical analysis of the research, percentage, average, ANOVA, Pearson product-moment correlation and regression were adopted. The exploration of the study reveals the following results: 1. The food sanitation practice’s average score of the is 88.9%. Serving and cleaning sanitation is the best section, and manufacturing process is the worst. 2. There are many different variables have correlation with staffs’ practice of food sanitation. They are on-the-job training, sanitation checking form, and technical personal license. 3. The first influence factor in food sanitation practice is sanitation checking form, the second is on-the-job training. |
