中文摘要 | 依1993-1996年國民營養調查,指出我國青少年攝取的蛋白質及脂肪比例過高,而鈣、鐵、維生素B₁、B₂、B₆與葉酸有不足的情形。青少年受生理、心理與環境的影響,其飲食問題包括省略餐食、喜好點心、速食與含糖飲料、蔬果吃得少,及以飲食減輕體重等。 WHO(世界衛生組織)的全球健康計劃中,提出學校是促進青少年健康的最佳場所,其可在供應的膳食中添加富含鈣質與鐵質的食物、蔬菜及水果以預防貧血及營養相關的慢性疾病;並藉由教育引導正當的飲食習慣、態度及均衡飲食的知識,以預防肥胖或營養不良,且增加運動,能使青少年獲得良好的健康。對於青少女的營養要特別注意,使其在可能懷孕之前改善營養,以降低母親及胎兒的死亡率。另外,青少年如與家人共同進食,可改進青少年的飲食習慣及生活型態。 |
英文摘要 | According to the Nutrition and Health Survey in Taiwan (NAHSIT 1993-1996), the percentage of protein and fat intake by adolescents in too high, whereas intake of calcium, iron, and vitamins-B₁, B₂, B₆, folic acid is deficient. Skipping meals, consumption of snacks, fast foods and sugar-rich beverages combined with a lack of vegetables and fruit intake and dieting are characteristic bahaviors among adolescents. These behaviors are influenced by physiological and psychological needs and social environment. In this Global Health Initiative, WHO suggests that schools are suitable settings to promote adolescent health by adding food rich in calcium and iron, and vegetables and fruit to their diet to prevent anemia and nutrition related chronic disease. Education about appropriate eating behavior, attitudes and knowledge of balanced diets may help prevent obesity or under-nutrition. Increasing physical activity will also help adolescents maintain better health. Adolescent girls particularly require knowledge of changes in nutritional status before pregnancy in order to decrease maternal and fetus mortality. Having meals with the family can assist adolescents to develop healthy eating behaviors. |
