中文摘要 | 本研究以臺灣某區域教學醫院的供膳作業流程為對象,利用命週期評估法探討醫院供膳對環境之衝擊,並分別比較使用免洗餐具的紙類與聚丙烯類,以及可回收餐具的不銹鋼及美耐皿類,四種餐具材質的環境衝擊。研究使用SP以E95的環境衝擊評估方法,將醫院內供膳作業的環境衝擊予以標準化處理。結果顯示環境衝擊指數:每供應1000人份餐,在免洗餐具部分以紙餐盒容器餐為2.11 Pt、聚丙烯塑膠盒容,器餐為2.40 Pt;在可回收餐具部份:不銹鋼容器為3.50 Pt、美耐皿容器餐為3.66 Pt。對環境的影響皆以酸化(Acidification)為主,其次是冬季煙霧(winter smong)。評估這四種醫院供餐的生命週期,使用可回收餐具盒餐因為餐具的清潔及消毒程序,導致環境衝擊指數較高。如何提昇可回收餐具處理的能源與物料效率,當是降低醫院膳食環境衝擊的重要課題。 |
英文摘要 | To investigate the life-cycle assessment (LCA) meal preparation using different materials as containers: disposable paper box and plastic box, and reusable stainless steel tray and melamine tray. SimaPro package using Eco-indicator 95 was utilized for normalizing the environmental impact of hospital meal preparation. The results indicated that environmental impact indices per 1000 services of hospital meal were 2.11, 2.40, 3.50 and 3.66 Pt for meals using containers paper, plastic, stainless steel and melamine, respectively. Acidification was found to be the highest contributor to the environmental impact, followed by winter smog. Because of high consumption of electricity, water, and fuel gas in cleaning disinfection process, environmental impact indices of hospital meal prepared using reusable meal containers were higher than those using disposable containers. The task remained, therefore, was how to increase energy and material efficiencies in container cleaning process. |
