中文摘要 | 本研究之目的乃藉由國內外葉酸食品營養成份資料的整理,設計一份可有效評估膳食葉酸攝取量之食物頻率問卷。經由飲食狀況之評估,以瞭解缺血性腦中風患者主要之高葉酸含量食物項目分佈。首先收集國內外食品葉酸營養成份資料,進行每項食物葉酸的比對與整理,並依食物類別設計出針對葉酸攝取之食物頻率問卷。再以臺北市立陽明醫院40名缺血性腦中風患者為病例組,40名經性別、年齡配對且無相關疾病史之健檢者為對照組,經由二十四小時飲食回憶記錄與所設計的食物頻率問卷評估膳食葉酸攝取情形。以皮爾森相關係數檢定食物頻率問卷與二十四小時飲食回憶記錄所評估的葉酸攝取量之相關性,結果顯示二者具顯著正相關(r=0.89, p<0.0001)。經由食物頻率問卷調查之研究結果顯示,腦中風組與對照組葉酸攝取主要食物選擇來源皆為蔬菜類,腦中風組依序為青江菜、菠菜、甘薯葉、麵製品類、包心白菜等,對照組依序為青江菜、菠菜、麵製品類、包心白菜、柳丁柑橘類等,但前十項食物選擇來源中,高葉酸含量的蔬菜選項腦中風組則少於對照組。因此,建議腦中風患者可選擇高葉酸含量的蔬菜攝取,以改善其膳食葉酸之攝取量。 |
英文摘要 | The aim of this study was to design a food frequency questionnaire (FFQ) for assessing dietary folate intake. The FFQ was then used to compare the frequency of folate-rich foods in ischemic stroke patients and in controls. First, we integrated the information on the folate contents of food items based on a USDA database and on other available database to establish our own folate composition databank. The questionnaire was developed based on food items gathered in this folate database. Forty ischemic stroke patients were recruited from Taipei Municipal Yang-Ming Hospital, and 40 age- and gender-matched healthy individuals were selected from the same hospital as the references. All subjects received on or two 24-hour dietary re-calls and the FFQ to assess their folate intake. In the healthy reference group, Pearson’s correlation analysis showed that folate intake assessed by FFQ was significantly correlated with that assessed by 24-hour dietary recall(r=0.89, p<0.0001),which indicated high validity of this questionnaire. By ranking food items which contributed 50% of total folate intake in all subjects, we found that the major folate intake source for all subjects was vegetables. The stroke group chose green Chinese cabbage, spinach, sweet potato leaves, pasta and Chinese cabbage as their major food sources of folate. The age- and gender-matched control group tended to choose green Chinese cabbage, spinach, pasta, Chinese cabbage and citrus. In the list of the 10 major food items contributing to folate intake levels, the stroke group chose fewer folate-rich vegetable items as compared to the healthy controls. |
