中文摘要 | 本研究為瞭解托兒園所餐飲服務的現況與問題,選取30所自台南縣、市政府立案、規模在150名以上托育學童,且徵得該所主管同意的托兒園所,作為樣本母群體。藉本調查所發展適用於托兒園所的「餐飲衛生現場評核表」來觀察、紀錄托兒園所餐飲衛生現況,同時採用大腸桿菌群(coliform counts)檢驗,分析砧板、飲用水及餐桌等幼兒餐飲衛生狀況。研究結果顯示在各項餐飲衛生評估中以廚房環境衛生與供膳衛生情況最好,有待加強的部分為供膳人員衛生與衛生制度。經大腸桿菌群檢驗結果發現部分的托兒園所使用的砧板、飲用水及幼兒用餐的桌子有被污染的現象。比較大腸桿菌群檢驗與餐飲衛生評估結果,發現餐飲衛生評估結果良好的園所,未必有較佳的大腸桿菌群檢驗結果,因此建議托兒園所除了定期採用檢核表檢視現場衛生之外,定期採用大腸桿菌群檢驗也是不可少的步驟。 |
英文摘要 | This study investigated the sanitation status of food services at childcare centers. Thirty accredited childcare centers with more than 150 students in Tainan, southwestern Taiwan were investigated. The sanitation status of each center was assessed using a locale evaluation form developed for this study, while the contamination of cutting boards, drinking water, and eating tables was evaluated by measuring coliform counts. From the data obtained, the sanitation of kitchen and food supplies received higher evaluation scores; however, health training and management, and personnel sanitation received lower scores. According to coliform counts, cutting boards, drinking water and eating tables at some childcare centers were contaminated. Among these childcare centers, one with a good sanitation score was contaminated with coliform. Therefore, to maintain or improve the food sanitation and safety of food services at childcare centers, periodical self-assessment and checking for coliform contamination are definitely needed. |
