中文摘要 | 在先導規模型之旋轉式內吊籃助晶機,以蒸發與隆溫同時進行,生產晶形冰糖。 經多次之反覆試驗,糖種以本方法及設備,可製得具單晶形狀之冰糖,其晶粒品質均一、變 異小、不需過篩且結晶速率可達90g/m /hr以上。糖蜜經兩次回煎,總析晶量對溶糖量的 收率可達50%以上。具單晶形狀之糖種經此法助晶後,晶粒尺寸之變異性會逐漸降低,而 不具單形狀之土冰糖種經此法助晶後,會生成具單晶形式之冰糖,且助晶次數愈多,成品之 晶形比例愈接近理論的蔗糖晶形。 |
英文摘要 | A new sugar product, regular rock crystal sugar, is prepared by crystallizing seed-sugar in concentrated syrup within a pilot scale inner-rotatory crystallizer by means of boiling and cooling. The batch product of crystal sugar is quite uniform, falling within a predetermined size range with a low CV value, and the crystallization rate can reach 90g/m /hr. The total sugar recovery from dissolved sugar can be over 50% after the molasses was reboiled twice. Either of the regular or irregular seed-sugar, the crystal size would be more uniform under this crystallization process. Finally, the regular rock crystal sugar can be obtained. |
