中文摘要 | 香氣是製茶程序及影響茶葉品質評估的重要指標,而生物電子鼻目前被廣泛應用在各種食品之感官分析檢驗,亦可應用在茶葉上。生物電子鼻系統架構與運作方式主要是模擬人類的嗅覺系統,基本上可分為感應器(sensors)、訊號處理(data processing)及類神經網路處理系統等三個階段。使用的感應器種類包括:氧化金屬半導體(MOS, metal oxide semiconductor)、導電聚合物(CP, conducting polymer)及壓電晶體(PZ, piezoelectric quartz crystals)等。茶葉在產、製、銷上有其特殊性,因此生物電子鼻可以在茶葉分級與品質鑑定、茶葉分類與真偽鑑定、茶葉製程指標、茶葉農藥殘毒檢驗及促進製茶程序自動化等方面有所發揮。 |
英文摘要 | Flavor is an important index of tea processing and an important factor influence tea quality. Bioelectric nose is widely applied on sensory evaluation of foods and also applied to tea industry. Bioelectric nose system is made for imitating human olfactory system and the three main stages are sensors, data processing and neural networks. Sensors including metal oxide semiconductor (MOS), conducting polymer (CP) and piezoelectric quartz crystals (PZ). Bioelectric nose is supposed to be well-applied on classification, quality determination, adulteration, processing index, pesticide residue detection and processing automation in tea industry in the future. |
