中文摘要 | 本研究選取在臺灣常見的『臺農一號』品種百香果為實驗對象,進行其果殼內所含花青素之分離、純化、結構鑑定及抗氧化性探討。將百香果殼以含酸甲醇萃取後,經各種液相管柱層析之分離與純化,得到兩個主要花青素,再利用紫外光-可見光吸光光譜、質譜、1H-核磁共振及13C-核磁共振光譜資訊之解析,鑑定其結構分別為:cyanidin-3-O-β-glucopyranoside及cyanidin-3-O-β-galactopyranoside。將兩種花青素以硫氰酸鐵法檢測其抗氧化性,發現cyanidin-3-O-β-glucopyranoside及cyanidin-3-O-β-galactopyranoside都具有優於α-生育醇的抗氧化效果,其中又以cyanidin-3-O-β-glucopyranoside較優。 |
英文摘要 | The purpose of this study was to isolate and identify the major anthocyanins from the fruit hulls of passion fruit and to investigate the antioxidative activity of the isolated anthocyanins. The acidic methanol extract of the fruit hulls of passion fruit was fractionated and purified by means of various liquid column chromatographies to obtain two major anthocyanins and identified as cyaniding-3-O-β-glucopyranoside and cyaniding-3-O-β-galactopyranoside by their UV-Vis, Mass, 1H-NMR and 13C-NMR spectra. The antioxidative activities of these isolated anthocyanins were better than that of α-tocopherol as measured using the ferric thiocyanate method. |
