英文摘要 | Both common and high-temperature mushrooms (Agaricus bisporus and A. bitorquis) were ireadiated with ultraviolet-C(UV-C) light for 0, 0.5, 1 and 2 h at 12°C, respectively. The volatile compounds were extracted with n-hexane and analyzed using gas chromatography and gas chromatography-mass spectrometry. In common mushrooms, the amounts of total volatiles were slightly affected by UV-C irradiation. The amount of 1octen-3-ol remained in the range of 28.76 to 30.53μg/g fresh weight as UV light was irradiated for 0 to 1 h, and decreased to 18.68μg/g after two hours of irradiation. In high- temperature mushrooms, the amounts of total volatiles increased from 23.32μg/g (control) to 67.81μg/g(1 h). However, prolonged two-hour irradiation had no additional effect. The amount of 1-octen-3-o1 increased from 16.72μg/g (control) to 54.65μg/g (1 h) and remained at 48.82μg/g (2 h). |
