中文摘要 | 油菜是稻田裡栽培最廣的肥料植物,但過去很少有研究探討油菜之酚類化合物含量及抗氧化活性,故本研究利用熱水、冷水、甲醇、乙醇為萃取溶劑,探討甘藍型油菜之花、莖及葉的總酚及類黃酮物質含量,並進行抗氧化活性評估,探討油菜作為保健素材之可行性。研究結果顯示,甘藍型油菜具有良好的DPPH 自由基清除能力及亞鐵離子螯合能力。油菜花及油菜莖的99.5%甲醇萃取液在稀釋100倍後仍具有84.30%及82.97%的DPPH自由基清除能力,油菜葉的50%乙醇萃取液在稀釋100倍後仍具有74.38%的DPPH自由基清除能力。而油菜葉的25%乙醇萃取液及50%乙醇萃取液在稀釋100倍後仍具有89.72%及86.20%的亞鐵離子螯合率,油菜花的25%乙醇萃取液及50%乙醇萃取液在稀釋100倍後仍具有89.30%及88.22%的亞鐵離子螯合率,油菜莖的25%乙醇萃取液在稀釋100倍後仍具有51.25%的亞鐵離子螯合率。甘藍型油菜之總酚物質萃取以75%乙醇之效果最好,此時油菜葉、油菜花及油菜莖的總酚含量分別為80.49、74.08 及48.21 mg/g GAE。而總類黃酮物質萃取以99.5%甲醇效果最好,此時油菜葉、油菜花及油菜莖的總酚含量分別為17.91、10.33 及2.56 mg/g QE。綜合以上結果,可證實甘藍型油菜為具有健康概念且價格低廉之天然素材。 |
英文摘要 | Rape (Brassica napus L.) is the most common green manure crop, but there were few studies to investigate the content of phenolic compounds and antioxidant activity of rape. Hot water, cold water, methanol and ethanol were used as solvents to obtain crude extracts from flowers, stems and leaves of Brassica napus L., then the content of total polyphenols and flavonoids, the scavenging activity of 2,2-dipheny1-1-picrylhydrazy1 (DPPH), total reducing power and Fe2+ chelating activity were determined. The B. napus L. extracts exhibited strong antioxidant activity. The DPPH radical scavenging activity of the 100-fold dilution of 99.5% methanolic extracts form rape flower and rape stems were 82.97% and 84.30%, and the 100-fold dilution of 50% ethanolic extracts form rape leaves was74.38%, respectively. The reducing power of 75% ethanolic extracts from each gram rape leaf, cold water extracts from each gram rape stem and flower could equivalent to 87.286mg, 84.267 mg and 54.546 mg ascorbic acid, respectively. The 25% ethanolic and 50% ethanolic extracts of rape leaves exhibited 89.72% and 86.20% Fe2+ chelating activity at l g/100mL concentration, 25% and 50% ethanolic extracts of rape flowers showed 89.30% and 88.22% Fe2+ chelating activity at l g/100mL concentration, and 25% ethanolic extracts of rape stems also exhibited 51.25% Fe2+ chelating activity at l g/100mL concentration. In our study, results indicated that 75% ethanol and 99.5% methanol were the best extract solvent for total phenolic compounds and flavonoids of B. napus L. The extracts of leaves, flowers and stems contain 80.49, 74.08 and 48.21 mg/g gallic acid equivalent (GAE), respectively; and 17.91, 10.33 and 2.56 mg/g quercetin equivalent, respectively. According to these results, Brassica napus L. was confirmed as a healthy and inexpensive natural materials. |
