英文摘要 | Dietary factors play an important role in both development and prevention of human cancer. Frequent intake of fresh fruits and vegetables is associated with a low cancer incidence. Fruits and vegetables are rich in vitamins, phytochemicals and fibers that can inhibit or delay the carcinogenic process. In this paper, diet for cancer prevention is briefly overviewed including (a) dietary factors may cause development of cancer, (b) dietary factors also play an important role on prevention of cancer and can inhibit one or more steps of carcinogenic process, (c) several classes of dietary phytochemicals share with common chemical and biological properties and their cancer preventive activity, (d) some selected phytochemicals in fruit, vegetable, spices, beverages and foods have been identified as potential cancer chemopreventive agents in animal models. Changing life-style by frequent intake of fresh fruits and vegetables and decreasing consumption of high fat diets, avoiding consumption of fried, broiled and charcoal-cooked meats may reduce cancer incidence. |
