中文摘要 | 近年來許多「文明病」因肥胖而產生,使得肥胖成為現代人的隱憂之一。 肥胖的 根本解決之道在於以正確的飲食配合適當的運動來有效控制。然而,少吃或改變飲食習慣對 大多數人而言卻不容易。於是,為了降低飲食中所攝取的熱量,市面上各種「替代食品」紛 紛出現,其中又以低脂肪甚至無脂肪者最讓消費者趨之若騖。 有鑑於此, 美國寶鹼公司( Procter & Gamble Co. )花了超過二億美元,以二十八年的時間研究開發出一種無脂脂肪 ( fat-free fat )- OLESTRA。它可用於各種冷熱食品之加工及烹調,並且完全不破壞食 物應有的風味。這種無脂脂肪因其脂肪酸的分子結構大於一般油脂,所以在通過腸道時無法 被酵素分解、消化、吸收而直接排出體外。實際上,olestra 本身就是油脂,之所以被稱為 「無脂」是因為沒有任何脂肪會被留在體內,因而不會產生任何熱量,更不會有任何脂肪囤 積於體內導致肥胖的產生。美國食品藥物管理局( FDA )經過多次會議討論,終於在 1996 年 1 月 24 日由 FDA 食品諮詢委員會的委員們表決通過,正式核淮 olestra 的上市。 然 而, 食用 olestra 所帶來的副作用會對人體健康造成負面的影響,因而此項通過受到許多 消費者團體、學者與研究單位的反對。此外,亦有研究結果指出,olestra 實際上對於飲食 當中熱量的減少並無助益。因為,人們在食用這些含脂肪量較低的「替代食品」時,會因為 放心而吃得更多;或是在吃完之後因為補償心理而吃一些以天然油脂製成的食品。因此脂肪 的攝取不但沒有減少,還可能產生了更多的熱量。姑且不論這些「替代食品」對於減輕體重 是否真的有用,在 olestra 開啟了食用脂肪新紀元的同時, 可預見的是,未來將會有更多 的產品加入此一「無脂」市場的競爭。 |
英文摘要 | A variety of different chronic diseases are associated with obesity and it is obviously a growing problem in today's civilized societies. Although it is known that the best way to prevent obesity is dietary control along with exercieses, most people can hardly resist the temptation from mouth-watering and tongue-pleasing foods rich in fat. To solve this problem, Procter & Gamble Co. has invested 28 years and more than 200 million U.S. dollars in studying and developing an experimental synthetic oil called Olestra which looks, tastes, feels, and behaves like real fat. Because of the unique chemical composition, olestra's molecule is larger than natural oil so that it cannot be digested and absorbed by human body. Therefore, it provides no fat to food. The U.S. Food and Drug Administration approved olestra for use in certain snack foods on January 24, 1996. However, the side effects resulted from consuming olestra are deeply concerned by many academic and research institutes, and many consumer and health groups are against FDA's approval of olestra. Moreover, weight reduction by way of using this fat-free fat is rejected by some studies which illustrate that people's eating behavior compensates for calories saved by olestra. In the final analysis, whether or not this fat substitute will help people reduce weight is uncertain; however, it is predictable that there will be more and more products entering this fat-free arena. |
