中文摘要 | 將β-胡蘿蔔素,β-紫羅蘭酮及5,6-epoxy-β-紫羅蘭酮之水溶液分別於140℃,密閉系統中進行反應1小時,其揮發性成份以氣相層析儀和氣相層析-質譜儀分析鑑定;β-柴羅蘭相對於5,6-epoxy-β-紫羅蘭酮在熟反應生成物上與β-胡蘿蔔素之氧化裂解產物有較好的相關性,共產生10個相同揮發性化合物,分別是2,6,6-trimethylcyclohexanone、2,6,6-trimethyl-2-cyclohexene-l-one、1-aetyl-2,6,6-trimethyl-l-cyclohexene、β-cyclocitral、 2-hydroxy-2,6,6-trimethylcyclohexane-l-carboxaldehyde、5,6- cpoxy-β-紫羅蘭酮、dihydfoactinidiolide、4-keto-β-紫羅蘭酮、4-hydroxy-β-紫羅蘭酮和4-(1,2-dihydroxy-2,6,6-trimethylcyclohex-l-yl)-3-buten-2-one。β-紫羅蘭酮不但是β-胡蘿蔔素氧化裂解反應之重要揮發性化合物,也是同一系列其它揮發性物質之前驅物,由其產生揮發性化合物之可能反應機構也一併提出。 |
英文摘要 | Thermal degradations ofβ-ionone, 5,6-epoxy-β-ionone andβ-carotene in a closed system heating at 140℃ for i hour, respectively, have led to the identification and/or tentative identification of 10 common volatile compounds, which are: 2, 6, 6-trimethylcyclohexanone, 2, 6, 6-trimethyl-2-cyclohexene-l-one, l-acetyI- 2,6, 6-trimethyl-l-cyclohexene, β-cyclocitral, 2-hydroxy-2, 6, 6-trimethylcyclohe- xane-l-carboxaldehyde, 5, 6-epoxy-β-ionone, dihydroactinidiolide, 4-keto-β-ionone,4-hydroxy-β-ionone and 4-(1, 2-dihydroxy-2, 6, 6-trimethylcyclohex-l-yI)-3-buten-2-one. β-Ionone may act as intermediate precursor of volatile compounds through the oxidative process ofβ-carotene. Mechanism explaining the formation of these compounds was also proposed. |
