| 中文摘要 | 由前報「稻米在栽培過程中能量之投入及其效率」一文中,得知臺灣一期蓬萊稻在栽培過程中,其產出能量與投入能量之比值為3.03。今乃進一步從稻米在田間栽培生產到變成消費者口中的米飯這一食物供給鏈的過程中,能量的投入及其效率做一個分析與探討。以台北市為消費地時,根據台北市延平區膳食調查報告知臺北市平均每人每天米的消耗量為258.4g,此258.4g之米在其食物供給鏈中能量的消耗,依序為田間生產64.82%,家庭中之調製31.80%,運銷3.18%,加工0.20%。平均台北市居民每人每日由米中所攝取的能量與其由生產到消費者口中總投入能量量之比值約為1.94。 |
| 英文摘要 | Total Energy Requirement to produce finished food servings becomes increasingly important in recent years as the limited nature of fossil fuel resources has come more fully into focus. Previous studies have shown the energy output/Input is 3.03 at the farm gate for rice. As our society becomes more industralization. We have to look the energy problem more Insight. Therefore, the estimation of energy consumption other than farming shall be covered. In this study energy output/input data will be used as a parameter to estimate the quantities of energy consumed in the agriculture, processing, transportation and household sectors. The distribution of energy consumption of various process from farm to consumer Is also estimated. The results are summerized as follows: (1)Of the total energy consumption from farm to the consumer, nearly 64.82 percent is consumed on farms. 34 .80 percent is consumed in household. 3.18 percent Is consumed in transportation and remaining 0.20 percent is consumed in processing. (2)When energy input in farming, transportation, processing and household are included in the calculation the energy output/input ratio is only 1.94. In this study under defined conditions, We find that energy recovery for crop production is declined as intensive application of fertilizer and mechanization as well as increasing energy consumption in the market and household level. It is obvious that the future patterns of living will change as the energy crisis becomes more serious. We suggest the following modification shall be made to increase the energy output/input ratio: 1. To establish an efficiency cropping system. 2. Improvement of cooking process at the household level. |
