中文摘要 | 本研究主要在討高雄市餐飲業內場人員工作認知之探討,研究目的有二:一、探索餐廳廚師同事相處的情形;二、瞭解廚師工作滿意度現況,並提供研究後之建議,以提供業者和學術界相關參考。研究方法先依文獻的探討取得理論,再以結構式訪談法,以質性研究中紮根理論為研究取向。結論如下:一、大多數的廚師認為與同事間相處是融洽的,意見不一致都會告知上司處理,了解自己在工作職場的角色定位,對於工作當中發生的任何事我能依據以往個人的經驗處理好,在工作中公司極重視個人工作效率,多數認為分工合作是必備的,同事間都能夠互相禮讓與理解;二、薪資部分還可以,升職是靠能力、資歷、工作態度,會繼續留在這行業繼續就職,工作環境是乾淨具有挑戰性,公司硬體完善,對於現在工作的負荷量是可以接受的,期能提供研究後續之建議,以提供業者和學術界相關參考。 |
英文摘要 | The purpose of this study was to investigate the kitchen staff ’s perception upon work in Kaoshiung hotels so that it could understand the situation of colleagues’ getting along with each other within restaurant departments; and moreover, to evaluate the kitchen staffs’ current satisfaction perception toward their jobs. Hopefully, this report could provide useful information or suggestion for researches and related industries eventually. This study employed structured interview according to literature reviews and ground theory to generate results. The conclusion revealed that first, most respondents agreed they are getting along well with each others and any inconsistent opinion could be resolved by their superiors. Participants understood their role playing in the company and they could deal well with tasks according to their experiences. Respondents possessed high level of efficiency and emphasized positive value on team works. Second, participants expressed acceptable attitude on salary; besides, they perceived job promotion would be determined via ability, experience, attitude so that they possessed intention of staying. Working environment is clean and well equipped, so did the working load is appropriate them according to their reports. |
