中文摘要 | 近年來,連續發生的諸如三氯氰胺及美國牛進口事件,一般民眾多普遍能感受農糧全球化對日常飲食安全之影響。然而,農糧全球化的影響尚不只在糧食安全層面,隨著國際飲食文化交流的日益頻繁,地方飲食系統、生活模式及飲食文化受到衝擊,做為糧食生產基地的鄉村生活品質亦受影響;而在個人層次,不當的飲食方式所造成的營養、健康問題日漸嚴重。為了重建永續的糧食體系、促進國民健康及維護地方飲食文化的傳承,本研究乃透過德爾菲法邀請專家共同建構適用於鄉村發展綠色飲食之指標,以做為農政單位推廣及評估農村飲食生活之參考。本研究提出「綠色飲食」做為全方位地推動友善的飲食生活方式之概念,並將飲食的問題安置回家庭與社區的互動網絡,思考其與飲食文化傳承、國民身心健康、食糧生產、環境保育間的連結關係,以提升鄉村居民的生活型態 (life style)、價值觀及需求。 |
英文摘要 | Recent years the food security incidents had continue to occur, such as melamine incident, the events of anti polluted U.S. beef import to Taiwan. Most of people felt the risk of over-reliance on food imports. However, not only on the national food security problems, with the increasing of the national exchange of food cultures, the local food system, lifestyle, and food culture are also impacted by the globalization of food. On personal level, the nutrition and health problem due to improper diet are more and more serious. In order to rebuild the sustainable food system, promote citizen's health and maintain the traditional food culture, the main purpose of this study is to develop the indicators of sustainable food which is feasibility to apply in rural society. |
