中文摘要 | 本研究為量化研究,以臺南縣市的成人素食者,吃素時間至少一年以上,且三餐均吃素者為研究對象,調查其素食營養知識、茹素態度及茹素行為,並不同個人背景在素食營養知識、茹素態度對茹素行為之預測力。抽樣方法採立意取樣,發出562份問卷,回收395份,共得有效卷336份。 本研究的重要結果有:(1)受試者的素食營養知識情形不佳,尤其是在衛生安全方面的知識較差。(2)大部分受試者對素食較傾向正向態度,認為吃素是健康、環保的,也會持續其茹素行為。(3)女性在素食營養知識上優於男性,而在茹素態度、茹素行為上男女並差異存在。素食型態不同其素食營養知識、茹素態度、茹素行為表現之間無差異存在。中社經與高社經在素食營養知識上均於低社經,但在茹素態度、茹素行為上,不同社經地位之間並無差異存在。(4)素食營養知識對茹素行為並無預測力,茹素態度及個人背景對茹素行為具預測力。 根據研究結果,本研究建議教育有關單位加強素食教育,充實成人在素食衛生安全方面的知識,尤其是男性素食者及低社經地位者。並建議後續研究可以廚師為樣本,探討廚師的素食營養知、茹素態度及茹素行為,以作為對廚師加強在職教育的參考。 |
英文摘要 | The purposes of this study were (1) to understand the vegetarian nutrition knowledge, attitude, and behaviors of adult vegetarians in Tainan. (2) To analyze the differences among the vegetarian nutrition knowledge, attitude, and behaviors of adult vegetarians. (3) To explore the explanatory power of the three predictors toward vegetarian behaviors. This study was a quantitative study. The population of this study was the adult vegetarian who lived in Tainan has taken vegetarian diet more than one year. Questionnaires were used to collect data by purposive sampling technique. 562 questionnaires were sent out, 395 were returned, and 336 were valid. The major findings of the study were as follows: (1) The vegetarian knowledge was not good enough, especially in food sanitation and food safety. (2) Most of the subjects had positive attitudes toward vegetarian diet, and were likely to continue their vegetarian diets. (3) There were differences in vegetarian nutrition knowledge between female and male, high social status and low social status. (4) The vegetarian nutrition knowledge could not predict the behaviors of adult vegetarians in Tainan. |
