中文摘要 | 本研究探討柑橘皮自體酵素將精油中之d-limonene轉換成含氧�I烯類,以降低精 油中碳氫�I烯類含量,相對提高含氧�I烯類之含量。實驗發現柑橘皮經打碎後,放置 於室溫30℃,14天後,其自體酵素會將橘皮中部分d-limonene催化轉換成含氧化含 物σ-terpineol、linalool、linalool oxide等。新鮮椪柑皮乙酸乙酯萃出精油之d- limonene含量為876.5mg/g精油,經自體酵素作用後,可減為609.7mg/g精油,d- limonene的轉換率達30∼32%,精油成分中之碳氫化合物組成也由原來的95.6%減 至79.3%,相對的含氧化合物則由4.4%增至20.7%,對精油之香味品質改進許多。 |
英文摘要 | This research was to investigate the possibility of converting the d-limonene (terpene hydrocarbons) to oxygenated compounds using the endogenous enzymes of the citrus peel. We found that after reaction at room temperature (30 ℃ ) for 14 days with endogenous enzymes of the citrus peel, part of the d-limonene did convert to oxygenated compounds, including α -terpineol, linaloolm,linalool oxide...etc. The d-limonene contents changed from 876.5 mg/g essential oil to 609.7 mg/g essential oil with a conversion rate of 30 ∼ 32%. Thus, the composition of the essential oil was changed through the bioconversion. The d-limonene contents decreased from 95.6% to 79.3% with a concomitant increase of the oxygenated compounds from 4.4% to 20.7%. These reactions greatly improved the flavor quality of the citrus peel oil. |
