中文摘要 | 本研究的目的在探討醫院營養師對於伙食外包可行性之看法,外包可節省之成本預估,及醫院規模是否會影響其伙食外包之意願。以八十四年公告醫院評鑑合格之所有的醫學中心、區域醫院及地區教學醫院共計123家之營養部門主管或資深營養師為研究對象。於民國86年4月發出共123份問卷,回收率61%,共計75份。結果發現國內醫院對部份外包的接受度較高,且醫院目前的營運情形及目前餐飲經營方式皆是影響醫院選擇外包型式的重點。但是醫院若採取外包的經營型式,則平均可省下146.3坪的空間及553.8萬元的設備費用,營養師可節省2人或轉任臨床工作,廚師、助理工人與其他人員則分別可節省5人、8人與2人。 |
英文摘要 | The objectives of this study were to investigate the possibility and to estimate the cost savings of contract management for food service in hospitals, and the hospital scale effect for food service contract management. One hundred and twenty three hospitals on the list accreditation by government in 1995, including medical center, regional hospital, and local teaching hospital, were selected as subjects in this study. Questionnaires were sent to the chair of Nutrition department or the senior dietitian in hospitals in April, 1997. The recovery of questionnaires is 6.1%. The results show that partial contract management is more hospitals in Taiwan, and the current operations status and diet style in hospitals can affect the scope of contract management. If total contract management is adopted in hospital, with a total area of 484.1 square meters and 5.53 million NT dollars of facilities can be saved on average. Two dietitians can be deducted or transferred to clinical positions. Five cooks, eightoassistants, and two other workers, respectively, also can be deducted. |
