中文摘要 | 本研究從不同集血方式著手,比較傳統收集與衛生收集(以下稱空心刀組)血液在 儲藏期間之理化學變化,探討其品質變敗的原因,期能作為屠畜血液衛生及利用方面的參考。 結果顯示:低溫(4℃)儲存期間之傳統收集組和空心刀組豬血液的色澤大致由鮮紅變至暗紅色; 傳統收集組的非血色質鐵量比空心刀組高(P<0.05);總不飽和脂肪酸含量則比空心刀組低。試 驗期間,傳統收集組在第6天及空心刀組在第9天開始出現異味。綜合上述結果推測,儲藏 中血液異味的產生與氨濃度、非血色質鐵量及不飽和脂肪酸量應有相當程度的關聯。 |
英文摘要 | This study was conducted to compare factors affecting the quality of porcine blood with the intention of hygienic utilization of these animal byproducts. The quality of porcine blood was compared by two methods of blood collection: open collection procedure and closed collection procedure. The open collection procedure was accomplished by sticking the blood vessel of commercial slaughtered hogs with a conventional knife and the blood was prevented from coagulation by vigorous stirring for defibrination. On the other hand, the closed collection procedure was prepared by using a hollow knife connected to a plastic hose and a collecting tank. Physicochemical (Hunter values, ammonia, nonheme iron and unsaturated fatty acids) changes of the blood during storage were determined and the main results were as follows: For open collection procedure, clotting was observed even when high anticoagulant concentration (0.9% sodium chloride+0.7-1.3% sodium citrate) was used. Therefore, defibrinating method was used in the process of blood collection. The Hunter values of chilled blood collected from both procedures were various and associated with visible color change from bright red to dark red, and the contents of NH3 increased significantly (P<0.05). Furthermore, the nonheme iron contents of open collected samples were higher than that from the closed collected samples, whereas the concentrations of polyunsaturated fatty acids of the former were lower than the latter. The marked off-odor of blood collected by open and closed collection method was observed during 6 and 9 days storage, respectively. |
