中文摘要 | 本研究利用含苯甲酸酐之聚乙烯抗菌膜及輕度微波加熱,以控制吳郭魚排於冷藏 期微生物之生長。 以抗菌膜 (製備時每克聚乙烯添加 40 mg 苯甲酸酐 ) 包�堙A於 4 ℃經 九天之儲存,吳郭魚排好氣菌與厭氣菌之含量,較用不含苯甲酸酐之聚乙烯膜所包�堣妊蔣� 為少。為減少抗菌劑之使用,先以微波作輕度之加熱處理,再用含苯甲酸酐較少之抗菌膜 ( 製備時每克聚乙烯添加 20 mg 苯甲酸酐 ) 包�堙A吳郭魚排於 4 ℃經 14 天之儲存, 亦可 得到相同之效果。結果顯示,抗菌膜單獨使用或與輕度微波加熱合併使用,均為有效控制吳 郭魚排儲存期微生物生長之方法。 |
英文摘要 | Benzoic anhydride-incorporated antimicrobial polyethylene (PE) films and minimal microwave heating were used to control the microbial growth of Tilapia fillets during cold storage. The fillets wrapped with antimicrobial PE films (40 mg benzoic anhydride per g of PE in the initial preparation) alone possessed less aerobic and anaerobic counts than the fillets wrapped with PE films without benzoic anhydride after 9 days of storage at 4 ℃. When the fillets were first microwavel for a short period of time (10, 20, or 30 sec), PE films containing less benzoic anhydride (20 mg benzoic anhydride per g of PE in the initial preparation) also achieved the same purpose during a 14-day storage period at 4 ℃. Using benzoic anhydride-incorporated PE films, either alone or in combination with minimal microwave heating, was effective to control microbial growth of Tilapia fillets during cold storage. |
