中文摘要 | 香菇栽培為具有經濟潛力之行業,於民國74年臺灣生產5千公噸的香菇,產值達40億元,佔食用菇類總產值的55%。香菇由於長期儲存的需要,必須將濕基含水率85-90%的新鮮菇乾燥至13%含水率以下,於食用時再浸漬復水至90%含水率。 目前臺灣菇農大多使用二或三排式香菇乾燥機。每排可放置尺寸為1.0×0.5m大小之網狀乾燥盤15盤,總容量為200至350公斤新鮮菇。這些乾燥機有採用垂直流向熱風,亦有使用水平流向熱風,但風速分佈都不均勻。 本研究設計並測試成功一平行流向香菇乾燥機,其尺寸為3.69×1.25×2.21m,乾燥室容積為5.2(m)3,一次可放置300公斤新鮮菇。經由18小時的乾燥時間,可將含水率86%之新鮮菇乾燥至8.6%,乾燥溫度由45℃遞增至70℃。 |
英文摘要 | Shiitake (forest mushroom Lentius edodes) cultivation is a potentially profitable industry. In 1985 in Taiwan dried Shiitake production reached 5,000 tons and was valued at US$160 million, 55%of the market value of all edible mushroom produced. For long-term storage the Shiitake has to be dried from a moisture content of 85-90% to 13%. Moisture is returned to 90% upon rewetting prior to cooking. In the drying process, the Shiitake is spread uniformly on a 1x 0.5m screen tray. Two or three stacks of fifteen trays are placed in a drying chamber. The most common dryer used by local Shiitake growers can handle 200-350 kg fresh Shiitake. Both parallel and vertical airflow systems inside the drying chamber are used by local Shiitake dryers, but neither produces uniform airflow during the drying process. In this study, a parallel air flow dryer measuring 3.69×1.25×2.21m with a drying chamber of 5.2 (m)3 which can hold 300 kg Shiitake was successfully developed and tested. It took about 18 hours to dry the Shiitake from a moisture content of 86% to 8.6%at an air temperature of 45℃ to 70℃ |
