中文摘要 | 技職教育課程是否能順應時代潮流並符合社會需求與學生能力,實在影響技職教育整體成效甚鉅。然而教學課程內容之落實,則又和教科書及教學內容之適切與否密切相關。家政職業學校目前共計有家政科、幼兒保育科、室內布置科、美容科、服裝科和食品科六科。本研究之主要目的在於探討職校家政、室內布置與食品三科課程教科書的來源、使用情形和各科教科書亟需協助部分。依據調查結果,家政科教科書需協助編定的大致有速食設計與製作、花卉設計與服飾製作。室內布置科需協助編定的教科書大致有施工與估價、室內布置和基本設計。食品科亟需協助編定的教科書計有團體膳食製備和膳食計畫與供應。 |
英文摘要 | Whether the curriculum could be brought up to date and adjusted to meet the social needs and student ability will affect the effectiveness of vocational and technical education tremendously. However, the fulfillment of each curriculum has a close relationship with the applicability of the course contents and the textbooks. Vocational-home economics school includes the following six programs: home economics, child care, interior layout, beauty, clothing and food science. The objectives of this study was to investigate the resourses and the utilization of the textbooks. The results of the questionnaire revealed that: (1)the textbooks of fast food design and preparation, floral design and clothing manufacture courses in home economics program (2) the textbooks of work and cost assessment, interior layout and drawing courses in interior layout program; and (3) the textbooks of group diet preparation and dietary plan and supply courses in food program were urgent to be written and published. |
