中文摘要 | 由於中國人對人生儀式及特殊事件場合的重視,使得「辦桌」筵席在臺灣歷久不衰。時至今日,傳統辦桌產業將如何在經濟與社會的互動關係中及在物質文明衝擊下適應社會脈動?辦桌產業提供了「傳統產業」可否與「現代經濟」共榮並存的反思。有鑑於此,本研究藉由外在產業總體環境、產業競爭環境及內在企業結構分析等面向來探討臺灣辦桌產業之發展歷程。並藉由質性研究中的深度訪談與參與觀察來蒐集相關資料。本研究發現辦桌產業因為內銷型產業加上「被動應召」的產業特殊運作模式,使得社會、文化與超環境等因素,其影響遠勝過於經濟與政治環境,且其中以新進入者的對辦桌業者所產生的威脅為最大。 |
英文摘要 | Banzhuo is a Taiwanese word, which refers to outdoor, or street-side catered banquets, which usually held under large temporary tents in order to celebrate weddings or occasions. Today, there are more and more restaurant industries providing for the catering service expand the market, forming the great competitive with the traditional industries. The study uses “In-depth interview survey”, “In-depth interview” and “Participant observation” was the principal method. The major findings of the research were follows: Taiwan's is catering industries were the “Non- negative provision” characteristics. These characters make the social, culture, and high environment effect more than low sharp economic environment and political environment. The one of great threat is different predicament. |
