中文摘要 | 本研究系利用微分脈波極譜法( DPN )測定暢銷的罐頭果汁中抗壞血酸含量, DPN 是以滴汞極為工作電極。本實驗之極譜分析採用標準添加法,以 pH4.66 之醋酸緩衝溶 液為支持電解質。由於抗壞血酸既是抗氧化劑又是熟知的維生素 C,其所以能在滴汞極上被 氧化,仍由於其共軛雙鍵所致。以此方法測定抗壞血酸含量,所得標準添加曲線之線性甚佳 。本實驗結果顯示各種罐頭果汁含抗壞血酸在 0.51ppm ∼ 51.81 ppm 之間,就營養而言, 適於國人飲用。 |
英文摘要 | In this work it has been studied the contents of ascorbic acid in some of popular canned fruit juices by differential pulse polarography (DPN). The DPN by which dropping mercury is used as working electrode. The standard addition method of polarographic analysis is demonstrated in the supporting electrolyte of the acetate medium at pH 4.66. The ascorbic acid is both an anti-oxidizing agent and also the wellknown C vitamin. It is electroactive thanks to its conjugated double bond. This method is the quite satisfactory linearity of the standard addition curve for the determination of the contents of ascorbic acid found in fruit juices. The measurement of the popular canned fruit juices of ascorbic acid in the range 0.51 ppm ~ 51.81 ppm are described. It may be concluded that the canned fruit juices are quite nutritional for drinking for as the contents of ascorbic acid is concerned. |
