中文摘要 | 胡瓜是本省周年生產之重要蔬菜,由於胡瓜在採收、分級、裝箱、加工及貯運等 銷售前作業流程,仍有碰撞、振動、壓擠或摩擦等效應,影響胡瓜市場品質至鉅,為了減少 損失,宜建立胡瓜之基本物性,以改善其包裝作業,由試驗顯示ぇ胡瓜之基部、果中部、果 頂部等三個部分之平均直徑與長度比平均約為 0.138。え胡瓜之平均含水率約 95 %,平均 比重量約為 0.975。 ぉ胡瓜之壓縮韌性以基部為最大,其平均值約為 1.35,而壓縮彈性約 為 29.1kg/cm �插C お胡瓜鮮果之拉伸彈性為 12.13kg/cm �插A冷藏一週後其拉伸彈性祗有 10.72kg/cm �插C か胡瓜基部之貫穿彈性大於果中部及果頂部,由潛變試驗得知其應變極限 約為 9 %,其容許荷重每長 1cm 約為 400g。 |
英文摘要 | Cucumber is one of the important annual vegetables in Taiwan. During the operation process of harvest, grading, packing, processing, storage and distribution, the impact of collide, vibration, pressed, or friction which could influence the marketing quality enormously. In order to decrease the lost, the establishment of the physical properties of cucumber is needed to improve the packing operation. The present studies has shown (1)The ratio of the average of diameter over the length was 0.138 for the basal part, middle part of fruit and the top of fruit. (2)Average moisture content was around 95 %, the average specific weight was 0.975. (3)the highest compression toughness is found in basal part, and the average was around 1.35, the compressive elasticity was around 29.1 kg/cm ��. (4)The tensile elasticity of the frest fruit was 12.13 kg/cm ��, the tensile elasticity was 10.72 kg/cm �� after one week cool storage. (5)The penetrating elasticity of the basal part is larger than those of middle and top of fruit. From the creep test, the strain critical value was around 9 % , the carry load was 400g per 1cm. |
