英文摘要 | The formation of interesterified triacylglycerols from triacylglycerols in olive oil or rice oil via interesterification in n-hexane was investigated using fixed bed reactors packed with ceramics- mmobilized sn-1,3-specific lipase. It was found that interesterification in a horizontal fixed bed reactor resulted in higher efficiency than that in a vertical fixed bed reactor. Interesterification could be promoted by using a three-unit in series horizontal fixed bed reactor. The half life of the interesterification reactor for the olive oil system and rice oil system was about 140 days and 84 days, respectively. The interesterified triacylglycerols from the reaction mixtures were purified through successive steps involving n-hexane, n-pentane and acetone treatments. The maximum melting point of the purified interesterified triacylglycerols from the olive oil system and the rice oil system was 37.05℃ and 37.08℃, respectively. The solid fat content of both purified interesterified triacylogoycerols was similar as measured using pulse NMR at 60℃ to 10℃. |
