中文摘要 | 本研究探討牛蒡水萃取物(water extract of burdock, WEB)對大豆油(soybean oil, SBO)與葵花油(sunflower oil, SFO)之抗氧化性。結果顯示,0.01、0.02與0.05%之 WEB對大豆油與葵花油的過氧化價(POV)、共軛雙烯氧化產物(conjugated diene oxidation products)與TBA值皆比對照組低,且其抗氧化活性皆大於0.02%α-生育醇(α -tocopherol, Toc)與0.02%丁基羥基甲氧苯(butylated hydroxyanisole, BHA) (p<0. 05%),但卻小於0.02%第三丁氫□(tertiary butyl hydroquinone, TBHQ) (p<0.05),由 此顯示WEB對大豆油與葵花油具有氧化安定的作用。將WEB與TBHQ的濃度作不同組合以探討 WEB對TBHQ是否具有相乘作用,結果顯示0.015%TBHQ+0.005%WEB、0.01%TEHQ+0.01%WEB與 0.005%TBHQ+0.015%WEB對大豆油與葵花油之氧化安定作用與0.02%TBHQ並無顯著的差異( p<0.05),顯示WEB對TBHQ在大豆油與葵花油之氧化安定作用上雖然不具相乘性,但卻可達 到部份取代TBHQ的目的。 |
英文摘要 | The antioxidant activity of the water extract of burdock (WEB) was evaluated for soybean oil and sunflower oil after accelerated oxidation at 60 ℃. Results showed that oils containing 0.01%, 0.02% and 0.05% WEB had significantly (p<0.05) lower peroxide values (POV), conjugated diene (CD) oxidation products and TBA values compared to the control after storage at 60 ℃. Moreover, oils with 0.01%, 0.02% and 0.05% WEB were significantly (p<0.05) superior to 0.02% butylated hydroxyanisole (BHA) and 0.02% α-tocopherol (Toc) in reducing the oxidation of SBO and SFO. Their effects were, however, significantly (p<0.05) inferior to those of 0.02% tertiary butyl hydroquinone (TBHQ). This result indicates that WEB can effectively inhibit peroxidation in soybean oil and sunflower oil. The antioxidant activity of the oils containing 0.015% TBHQ+0.005% WEB、0.01% TBHQ+0.01% WEB and 0.005% TBHQ+ 0.015% WEB were the same as that of oil containing 0.02% TBHO, indicating that no synergism of WEB was observed on the inhibitory effect of TBHQ in SBO and SFO. This fact, however, clearly reveals that TBHQ can in part be replaced by WEB in inhibition of peroxidation of SBO and SFO. |
