中文摘要 | 本研究收集沙拉油及葵花油之烹飪用油加熱後產生之油煙,加以進一步分析其致突變性。 結果顯示沙拉油經加熱後產生油煙之致突變反應分別在濃度 0.5mg 時其致突變性為 20 ± 3 Revertants/plate (-S9) 及 30 ± 5 Revertants/plate (+S9), 在濃度1.0mg 時其致突變性為 38 ± 4 Revertants/plate (-S9) 及 55 ± 4 Revertants/plate(+S9), 在濃度 2.0mg 時其致突變性為 55 ± 4 Revertants/plate (-S9) 及 70 ± 5 Revertants/plate (+S9),顯示在 180 ℃ -200 ℃之間產生之油煙其有致突變性反應, 然而葵花油則在致突變性反應中未大於背景突變反應值之二倍而呈現微弱反應。此結果可提供華人地區婦女低吸煙率但肺癌發生率卻相對較高之初步解釋。 |
英文摘要 | Vapor from two different cooking oils used in Taiwan were collected to be analyzed for mutagenicity. Extracts from Soybean oil fumes displayed the positive mutagenicity, with its mutation being 20 ± 3 Revertants/plate (-S9) nd 30 ± 5 Revertants/plate when extract concentration was 0.5mg; 38 ± 4 Revertants/plate and 55 ± 4 Revertants/plate when that was 1.0mg, 55 ± 4 Revertants/plate and 70 ± 5 Revertants/plate when that was 2.0mg. Extracts of Sunflower oil fumes were found to display little mutagenic response even in the presence of S9 mix. The results of this study may help explain why Chinese women smoke little but contract lung cancer rather frequently. |
