中文摘要 | Bacillus cereus CCRC 10446及Enterobacter sp.分別經增殖培養後製成菌體懸浮液,再以正常無菌包奶茶飲料為實驗材料,接種上述定量微生物至樣品中,37℃下培養,於貯藏適當時間後,取出樣品以ATP生物冷光儀進行分析,與傳統無菌包檢驗方法相比較。結果顯示,在接種Enterobacter sp.的飲料中,當傳統方法在12小時無法檢出樣品有異常情況時,ATP生物冷光反應法已能檢出少部分樣品有異常的情況發生,而到24小時傳統方法只能偵測部份樣品異常時,ATP生物冷光反應方法已檢出大部份樣品有明顯異常的情況。至於接種Bacillus cereus的樣品,在保溫48小時後亦有相同之結果。顯示ATP生物冷光反應技術確實能有效地縮短無菌包飲料保溫試驗的時間,增加業者的生產效益,提升產品競爭力。 |
英文摘要 | Bacillus cereus CCRC 10446 and isolated strains of Enterobacter sp. Were enriched to make suspensions for inoculation tests on aseptic package milk tea products. The inoculated samples were incubated at 37℃ for different time intervals to check spoilage signals using the ATP bioluminescence technique and the traditional method. For the Enterobacter sp. Inoculated samples, we found that the ATP bioluminescence technique could detect spoilage signals for samples incubated for 12 hr and could indicated spoilage completely at 24 hr. However, the traditional method detected only a portion of the spoiled products at 24 hr. Regarding the Bacillus cereus inoculated samples, a similar phenomenon could be found for samples incubated for 48 hr. These preliminary results showed that the ATP bioluminescence technique can be applied to the inspection of aseptic package products, can shorten the release decision making and promote competition. |
