中文摘要 | 本研究旨在開發自動化辣椒剝皮機,作為油炸剝皮辣椒加工用。應用蝦剝殼機之 剝殼滾筒組加以改良,可有效達到辣椒剝皮之目的。剝皮時將辣椒進料於一剝皮滾筒組上, 利用剝皮滾筒組和上方的擠壓輪將辣椒外皮剝離,達到剝皮的效果。試驗結果顯示,以偏心 6mm 軟質橡膠表面有凸粒型式的壓輪具有較佳的剝皮效果,單一剝皮線測試時,剝皮完全率 可高達 89%、剝皮不淨率為 11%,整體剝皮系統測試時剝皮完全率為 87.6%、剝皮不淨率為 12.4%。 設計之剝皮機具有 5 條剝皮作業線,在 2 人作業情形下,每小時可處理 90.8 公 斤的原料,較人工剝皮快約 4.5 倍,機械操作每小時耗電約 1.2 度、用水量為 804 l/h, 系統的整體表現可為業者所接受。 |
英文摘要 | The objective of this study was to develop a peeler for fried pepper. The three-rubber-roller set of shrimp peeling machines was improved and applied to peeling fried pepper. The roller set can efficiently achieve the peeling purpose. In the peeling process, the fried pepper was dropped onto the roller set, and its outer skin was pulled off by using the roller set fabricated from three rows of squeezing wheels on the rollers surfaces. The experimental result shows that the squeezing wheel, a soft-rubber material with particles on the surface and with a 6mm-eccentric squeezing device, can obtain better peeling results. The complete peeling rate reaches 89% with an 11% incomplete rate for a single peeling line test. Similarly, for a whole system with five peeling lines, it shows an 87.6% completion rate, and 12.4% incompletion rate. Both tests produce no injury to peppers. The peeler with five peeling lines can process about 90.8kg hourly with two workers which is about 4.5 times faster than by hand. The electric consumption is about 1.2 degree per hour, and 804 liters per hour for water consumption. Consequently, the peeling system should be accepted by users. |
